Description

A comforting and lighter twist on classic pizza, this zucchini pizza casserole is layered with tender zucchini, rich marinara sauce, and gooey melted cheese, baked to golden perfection.


Ingredients

  • 4 medium zucchini, sliced
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 large eggs
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F and lightly grease a baking dish.
  2. In a mixing bowl, combine eggs, garlic, Italian seasoning, salt, and black pepper.
  3. Brush zucchini slices lightly with olive oil.
  4. Layer zucchini slices, marinara sauce, and mozzarella cheese in the baking dish, repeating layers until ingredients are used.
  5. Bake for 35 minutes until cheese is melted and lightly golden.
  6. Sprinkle parmesan cheese on top and bake for an additional 5 minutes.
  7. Remove from oven, let rest for a few minutes, then slice and serve.
