- 4 medium zucchini, sliced
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 large eggs
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F and lightly grease a baking dish.
- In a mixing bowl, combine eggs, garlic, Italian seasoning, salt, and black pepper.
- Brush zucchini slices lightly with olive oil.
- Layer zucchini slices, marinara sauce, and mozzarella cheese in the baking dish, repeating layers until ingredients are used.
- Bake for 35 minutes until cheese is melted and lightly golden.
- Sprinkle parmesan cheese on top and bake for an additional 5 minutes.
- Remove from oven, let rest for a few minutes, then slice and serve.
Notes
- Salt zucchini lightly and let it sit to release excess moisture before using.
