Description

This zucchini lasagna with ground turkey is a lighter twist on the classic comfort food favorite. Tender zucchini slices are layered with savory ground turkey, rich marinara sauce, creamy ricotta, and melted mozzarella cheese for a hearty and satisfying baked dinner.

  • 4 medium zucchini, sliced lengthwise into thin strips
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups marinara sauce
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh basil

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9×13 baking dish.
  2. In a mixing bowl, combine ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and black pepper until smooth.
  3. Heat olive oil in a large skillet over medium heat. Cook diced onion until softened, then add garlic and ground turkey. Cook until browned. Stir in marinara sauce and simmer for 5 minutes.
  4. Pat the zucchini slices dry with paper towels to remove excess moisture.
  5. Spread a thin layer of turkey sauce in the baking dish. Add a layer of zucchini slices, followed by ricotta mixture, turkey sauce, and mozzarella cheese. Repeat the layers until all ingredients are used.
  6. Cover the dish with foil and bake for 35 minutes.
  7. Remove the foil and bake for another 15 minutes until the cheese is golden and bubbling.
  8. Let the lasagna rest for 10 to 15 minutes before slicing.
  9. Sprinkle fresh basil over the top and serve warm.

Notes

  • Salt and pat dry the zucchini slices beforehand to help prevent excess moisture.
  • Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
  • The lasagna tastes even better the next day after the flavors settle together.
  • You can freeze individual portions for easy future meals.
