Instructions
- Place a large pot on medium heat and warm it gently.
- Add olive oil, then sauté the chopped onion and garlic until soft and fragrant.
- Stir in the grated ginger and cook briefly to release its aroma.
- Add the chopped carrots and pour in the vegetable broth.
- Let everything simmer for about 25 minutes, until the carrots are tender.
