Description

Tender roasted salmon coated in a creamy yogurt and spice marinade, served with fluffy rice, fresh cucumber, and bright lemon for a flavorful and comforting dinner.


Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 3/4 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 cup cucumber slices
  • 2 cups cooked rice

Instructions

  1. Preheat the oven to 425°F and lightly grease a baking dish or sheet pan.
  2. In a bowl, combine the Greek yogurt, olive oil, lemon juice, lemon zest, garlic, smoked paprika, cumin, coriander, turmeric, salt, and black pepper until smooth.
  3. Arrange the salmon fillets skin side down on the prepared baking dish.
  4. Spread the yogurt spice mixture evenly over the salmon fillets.
  5. Roast for 12 to 15 minutes until the salmon flakes easily with a fork and the edges are lightly golden.
  6. Sprinkle chopped parsley over the salmon and serve with cucumber slices and rice.
  7. Serve warm with lemon wedges if desired.
