- 4 salmon fillets, about 6 ounces each
- 3/4 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 1 cup cucumber slices
- 2 cups cooked rice
Instructions
- Preheat the oven to 425°F and lightly grease a baking dish or sheet pan.
- In a bowl, combine the Greek yogurt, olive oil, lemon juice, lemon zest, garlic, smoked paprika, cumin, coriander, turmeric, salt, and black pepper until smooth.
- Arrange the salmon fillets skin side down on the prepared baking dish.
- Spread the yogurt spice mixture evenly over the salmon fillets.
- Roast for 12 to 15 minutes until the salmon flakes easily with a fork and the edges are lightly golden.
- Sprinkle chopped parsley over the salmon and serve with cucumber slices and rice.
- Serve warm with lemon wedges if desired.
