Instructions
- Make sure your blender or food processor is clean, dry, and ready to use.
- Add the cottage cheese, Greek yogurt, honey, lemon juice, vanilla extract, and fine sea salt to the blender.
- Blend for 45 to 60 seconds, then stop and scrape down the sides with a spatula.
- Blend again until the mixture is smooth, creamy, and fluffy, with no visible curds.
- Spoon the mixture into a serving bowl and swirl the top with the back of a spoon.
- Top with fresh berries.
- Serve chilled with toast, fruit, crackers, granola, or crisp vegetables.
Notes
- Use full-fat cottage cheese for the creamiest texture.
- Chill for 10 to 15 minutes before serving if you want a thicker spread.
- For a savory version, skip the honey and vanilla, then add herbs, black pepper, or garlic powder.
