Description

A smooth, creamy, high-protein cottage cheese spread blended with Greek yogurt, honey, lemon, vanilla, and topped with fresh berries.


Ingredients

Scale
  • 2 cups full-fat cottage cheese
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1/2 cup fresh berries, for topping

Instructions

  1. Make sure your blender or food processor is clean, dry, and ready to use.
  2. Add the cottage cheese, Greek yogurt, honey, lemon juice, vanilla extract, and fine sea salt to the blender.
  3. Blend for 45 to 60 seconds, then stop and scrape down the sides with a spatula.
  4. Blend again until the mixture is smooth, creamy, and fluffy, with no visible curds.
  5. Spoon the mixture into a serving bowl and swirl the top with the back of a spoon.
  6. Top with fresh berries.
  7. Serve chilled with toast, fruit, crackers, granola, or crisp vegetables.

Notes
