Description

Tender Turkish stuffed onions filled with seasoned ground beef and rice, baked in a rich tomato-infused sauce until soft, savory, and deeply comforting.


Ingredients

  • 6 medium yellow onions
  • 1 pound ground beef
  • 1 cup uncooked white rice
  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 2 cups water
  • Lemon slices for serving

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a large baking dish with olive oil.
  2. In a large bowl, combine the ground beef, uncooked white rice, tomato paste, minced garlic, chopped parsley, paprika, black pepper, salt, and 2 tablespoons olive oil. Mix well.
  3. Bring a large pot of water to a gentle boil. Trim the tops and bottoms of the onions, peel them, and make a shallow slit down each onion. Boil for about 10 minutes until slightly softened.
  4. Remove onions from the water and allow them to cool slightly. Carefully separate the onion layers.
  5. Fill each onion layer with a spoonful of the beef and rice mixture and gently wrap closed.
  6. Arrange the stuffed onions tightly in the prepared baking dish.
  7. Mix the remaining olive oil with 2 cups water and pour around the onions.
  8. Cover the dish with foil and bake for 45 minutes.
  9. Remove the foil and bake an additional 20 minutes until lightly caramelized and the rice is fully cooked.
  10. Allow the dish to rest for 10 minutes before serving with lemon slices and extra parsley if desired.

Notes

  • Do not overcook the onions before separating the layers.
  • Pack the filling gently because the rice expands during baking.
  • Add extra chopped parsley before serving for freshness.
  • Leftovers taste even better the next day after the flavors deepen.
