Ingredients

  • 2 lemongrass stalks, smashed
  • 4 kaffir lime leaves
  • 1 tablespoon ginger, sliced
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place a large pot over medium heat and let it warm gently.
  2. Add chicken broth, lemongrass, ginger, and kaffir lime leaves, then bring to a gentle simmer.
  3. Allow the mixture to simmer for a few minutes to infuse flavors.
  4. Stir in coconut milk, mushrooms, and shrimp carefully.
