- 8 medium tortillas
- 3 cups cooked shredded chicken
- 2 cups shredded cheese
- 2 cups tomato sauce
- 1 cup black beans
- 1 cup corn kernels
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 180°C and lightly grease a baking dish.
- Heat olive oil in a skillet, sauté chopped onion and minced garlic until fragrant.
- Add shredded chicken, tomato sauce, black beans, corn, chili powder, cumin, paprika, salt, and black pepper. Stir until well combined and heated through.
- Spread a thin layer of the mixture on the bottom of the baking dish.
- Layer tortillas over the sauce, then add more chicken mixture followed by shredded cheese.
- Repeat layers until all ingredients are used, finishing with a layer of cheese on top.
- Bake for 30 minutes until bubbly and golden.
- Let rest for 10 minutes before slicing and serving.
