Description

A bold and comforting layered casserole packed with shredded chicken, tortillas, smoky enchilada sauce, black beans, corn, and plenty of melted cheese. This spicy chicken tortilla lasagna is hearty, cheesy, and perfect for family dinners or meal prep.

  • 3 cups cooked shredded chicken
  • 10 medium corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup sweet corn
  • 3 cups red enchilada sauce
  • 1 can (14 ounces) diced tomatoes
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until softened. Stir in garlic, chili powder, cumin, paprika, salt, and black pepper.
  3. Add shredded chicken, black beans, corn, diced tomatoes, and 2 cups enchilada sauce. Stir until evenly combined and heated through.
  4. Spread a thin layer of enchilada sauce in the baking dish.
  5. Layer tortillas across the bottom, then add chicken mixture and sprinkle cheddar and mozzarella cheese.
  6. Repeat the layers until all ingredients are used, finishing with sauce and cheese on top.
  7. Cover loosely with foil and bake for 25 minutes.
  8. Remove foil and bake for another 15 minutes until bubbly and golden.
  9. Let rest for 10 minutes before slicing.
  10. Garnish with fresh cilantro and serve warm.

  • Rotisserie chicken works great for quicker preparation.
  • Let the casserole rest before slicing for cleaner layers.
  • Add jalapeños for extra spice.
