Description

A vibrant and flavorful rice bowl packed with black beans, corn, fresh vegetables, and zesty toppings that come together for a satisfying and colorful meal.


Ingredients

  • 1 cup long grain rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup chopped tomatoes
  • 1 avocado, sliced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1 lime, cut into wedges
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Place a large pot over medium heat to prepare for cooking the rice.
  2. Rinse the rice thoroughly, then add it to the pot with water, olive oil, and a pinch of salt.
  3. Cook the rice until tender, then fluff it gently and let it cool slightly.
  4. In a large mixing bowl, combine the cooked rice, black beans, corn, diced peppers, tomatoes, cumin, chili powder, salt, and pepper.
  5. Toss everything together until evenly mixed and coated with seasoning.
  6. Add sliced avocado, shredded cheese, sour cream, salsa, fresh lime juice, and chopped cilantro on top.
  7. Serve immediately or chill slightly before serving for a refreshing version.
