Description

A rich and comforting slow cooker dish made with tender beef, sweet potatoes, and hearty vegetables simmered in a savory sauce.


Ingredients

  • 500 grams beef chuck, cut into chunks
  • 2 medium sweet potatoes, peeled and cubed
  • 2 medium carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Set the slow cooker to low heat to preheat.
  2. In a bowl, mix beef broth, tomato paste, paprika, thyme, salt, and black pepper.
  3. Lightly grease the slow cooker with olive oil.
  4. Add beef, sweet potatoes, carrots, onion, and garlic into the slow cooker, then pour the broth mixture over everything.
  5. Cover and cook on low for 6 hours until the beef is tender and vegetables are soft.
  6. Stir gently to combine flavors and adjust seasoning if needed.
