Description

Juicy skillet-cooked chicken infused with garlic, herbs, lemon, and fresh vegetables, finished with creamy cheese for a vibrant Mediterranean-inspired meal.


Ingredients

  • 600 grams boneless chicken pieces
  • 1 cup cherry tomatoes
  • 1 medium red onion, sliced
  • 1/2 cup black olives
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 whole lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled white cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium heat.
  2. In a bowl, mix chicken with olive oil, garlic, oregano, paprika, salt, and pepper.
  3. Add a little olive oil to the skillet if needed.
  4. Place chicken pieces into the skillet in a single layer.
  5. Cook for about 12 minutes, turning halfway, then add tomatoes, onions, and olives and cook for another 8 minutes.
  6. Squeeze fresh lemon juice over everything and sprinkle cheese and parsley.
  7. Serve warm straight from the skillet.

Notes

  • Use fresh lemon juice for the best flavor
  • Do not overcrowd the skillet for proper browning
  • Let the chicken rest briefly before serving
