Description

Light, garlicky, and packed with fresh lemon flavor, these shrimp scampi zoodles combine tender shrimp with zucchini noodles in a silky buttery sauce for a quick and satisfying meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into noodles
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 small lemon, sliced
  • 3 tablespoons fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese

Instructions

  1. Heat a large skillet over medium heat and add the olive oil along with 1 tablespoon of butter.
  2. Season the shrimp with salt and black pepper.
  3. Add the shrimp to the skillet and cook for about 2 minutes per side until pink and lightly golden. Remove and set aside.
  4. Melt the remaining butter in the skillet, then add the garlic and red pepper flakes. Cook for 30 seconds until fragrant.
  5. Stir in the lemon juice and lemon slices.
  6. Add the zucchini noodles and toss gently for 2 to 3 minutes until just tender.
  7. Return the shrimp to the skillet and toss everything together until coated in the sauce.
  8. Sprinkle with parsley and parmesan cheese before serving.

Notes

  • Do not overcook the zucchini noodles or they may become watery.
  • Fresh lemon juice gives the best flavor.
  • Serve immediately for the best texture.
  • Add extra red pepper flakes if you prefer more heat.
