- 1 pound large shrimp, peeled and deveined
- 4 medium zucchini, spiralized into noodles
- 3 tablespoons unsalted butter
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 small lemon, sliced
- 3 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated parmesan cheese
Instructions
- Heat a large skillet over medium heat and add the olive oil along with 1 tablespoon of butter.
- Season the shrimp with salt and black pepper.
- Add the shrimp to the skillet and cook for about 2 minutes per side until pink and lightly golden. Remove and set aside.
- Melt the remaining butter in the skillet, then add the garlic and red pepper flakes. Cook for 30 seconds until fragrant.
- Stir in the lemon juice and lemon slices.
- Add the zucchini noodles and toss gently for 2 to 3 minutes until just tender.
- Return the shrimp to the skillet and toss everything together until coated in the sauce.
- Sprinkle with parsley and parmesan cheese before serving.
Notes
- Do not overcook the zucchini noodles or they may become watery.
- Fresh lemon juice gives the best flavor.
- Serve immediately for the best texture.
- Add extra red pepper flakes if you prefer more heat.
