Description

  • 6 bone-in, skin-on chicken thighs
  • 2 whole garlic bulbs
  • 8 ounces cremini mushrooms, sliced
  • 1 cup freshly grated Asiago cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F. Slice the tops off the garlic bulbs, drizzle lightly with olive oil, wrap in foil, and roast for 35 minutes.
  2. Season the chicken thighs with salt and black pepper. Slice the mushrooms and grate the Asiago cheese.
  3. Heat olive oil in a large cast iron skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5 to 6 minutes until golden and crispy. Flip and cook another 3 minutes. Transfer chicken to a plate.
  4. Reduce heat slightly and melt butter in the same skillet. Add mushrooms and cook until softened. Stir in flour and cook for 1 minute.
  5. Slowly pour in chicken broth and heavy cream while stirring constantly. Squeeze roasted garlic cloves into the skillet and stir until smooth.
  6. Add grated Asiago cheese and stir until melted and creamy.
  7. Return chicken to the skillet and spoon sauce over the top. Transfer skillet to the oven and bake for 20 minutes until chicken reaches 165°F internally.
  8. Sprinkle fresh thyme over the dish and let rest for 5 minutes before serving.
  9. Serve hot with mashed potatoes, noodles, or crusty bread.
