- 6 bone-in, skin-on chicken thighs
- 2 whole garlic bulbs
- 8 ounces cremini mushrooms, sliced
- 1 cup freshly grated Asiago cheese
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme leaves
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon freshly cracked black pepper
Instructions
- Preheat oven to 400°F. Slice the tops off the garlic bulbs, drizzle lightly with olive oil, wrap in foil, and roast for 35 minutes.
- Season the chicken thighs with salt and black pepper. Slice the mushrooms and grate the Asiago cheese.
- Heat olive oil in a large cast iron skillet over medium-high heat. Place chicken thighs skin-side down and cook for 5 to 6 minutes until golden and crispy. Flip and cook another 3 minutes. Transfer chicken to a plate.
- Reduce heat slightly and melt butter in the same skillet. Add mushrooms and cook until softened. Stir in flour and cook for 1 minute.
- Slowly pour in chicken broth and heavy cream while stirring constantly. Squeeze roasted garlic cloves into the skillet and stir until smooth.
- Add grated Asiago cheese and stir until melted and creamy.
- Return chicken to the skillet and spoon sauce over the top. Transfer skillet to the oven and bake for 20 minutes until chicken reaches 165°F internally.
- Sprinkle fresh thyme over the dish and let rest for 5 minutes before serving.
- Serve hot with mashed potatoes, noodles, or crusty bread.
