Description

Creamy rosemary garlic mashed potatoes made with buttery Yukon Gold potatoes, roasted garlic, fresh rosemary, and sour cream for the ultimate comforting side dish.


Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 8 garlic cloves, roasted
  • 2 teaspoons fresh rosemary, finely chopped
  • 6 tablespoons unsalted butter
  • 1 cup whole milk, warmed
  • 1/2 cup sour cream
  • 1 1/2 teaspoons salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F. Wrap garlic cloves in foil with a small amount of butter and roast for 30 minutes until soft.
  2. Place potatoes in a large pot and cover with cold salted water.
  3. Bring to a boil and cook for 15 to 20 minutes until fork tender.
  4. Drain potatoes and return to the warm pot.
  5. Add roasted garlic, butter, warmed milk, sour cream, rosemary, salt, and black pepper.
  6. Mash until smooth and creamy.
  7. Transfer to a serving bowl and garnish with extra butter and rosemary if desired.
