- 3 pounds Yukon Gold potatoes, peeled and cut into chunks
- 8 garlic cloves, roasted
- 2 teaspoons fresh rosemary, finely chopped
- 6 tablespoons unsalted butter
- 1 cup whole milk, warmed
- 1/2 cup sour cream
- 1 1/2 teaspoons salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F. Wrap garlic cloves in foil with a small amount of butter and roast for 30 minutes until soft.
- Place potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15 to 20 minutes until fork tender.
- Drain potatoes and return to the warm pot.
- Add roasted garlic, butter, warmed milk, sour cream, rosemary, salt, and black pepper.
- Mash until smooth and creamy.
- Transfer to a serving bowl and garnish with extra butter and rosemary if desired.
