Description
Tender pears slowly poached in a rich spiced red grape syrup until beautifully ruby colored and silky soft, served with creamy mascarpone for an elegant dessert.

- 4 firm Bosc pears, peeled with stems intact
- 3 cups red grape juice
- 1 cup water
- 1/2 cup granulated sugar
- Peel from 1 orange
- 2 cinnamon sticks
- 2 whole star anise pods
- 1 teaspoon vanilla extract
- 1/2 cup mascarpone cheese, for serving
Instructions
- Place a large saucepan over medium heat.
- Add the red grape juice, water, sugar, orange peel, cinnamon sticks, star anise, and vanilla extract. Stir until the sugar dissolves.
- Bring the mixture to a gentle simmer.
- Carefully add the peeled pears to the saucepan.
- Simmer gently for 25 to 30 minutes, turning occasionally until the pears are tender and evenly colored.
- Remove the pears carefully with a slotted spoon.
- Continue simmering the liquid for 10 minutes until slightly thickened into a glossy syrup.
- Serve the pears warm or chilled with syrup and mascarpone cheese.
Notes
- Use firm pears so they hold their shape during cooking.
- Allow the pears to cool in the syrup for deeper flavor.
- The syrup can be made ahead and stored refrigerated.
- Extra syrup tastes delicious over pancakes or ice cream.
