Description

Fresh, creamy cottage cheese made from raw milk with soft curds and a mild tangy flavor, perfect for both sweet and savory dishes.


Ingredients

Scale
  • 1 gallon raw milk
  • 1/4 cup white vinegar or lemon juice
  • 1 teaspoon salt
  • 1/4 cup heavy cream

Instructions

  1. Pour the raw milk into a large pot and slowly heat it to about 85°C, just below boiling.
  2. Remove from heat and gently stir in the vinegar or lemon juice.
  3. Let the mixture sit undisturbed for 10 minutes until curds form.
  4. Line a colander with cheesecloth and carefully pour the mixture into it.
  5. Allow the curds to drain for 10 to 15 minutes depending on your preferred texture.
  6. Rinse the curds lightly if you want a milder flavor.
  7. Transfer to a bowl, mix with salt and heavy cream.
  8. Serve immediately or chill before serving.

  • Use fresh, high-quality milk for best flavor
  • Do not overheat the milk to avoid tough curds
