- 4 medium sweet potatoes
- 300 grams ground meat
- 1 cup black beans
- 1 cup corn kernels
- 1 cup diced tomatoes
- 2 green onions, chopped
- 1 cup shredded cheese
- 1/2 cup yogurt or sour cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 200°C and line a baking sheet.
- Heat olive oil in a skillet, cook ground meat with garlic, paprika, cumin, salt, and pepper until browned.
- Place whole sweet potatoes on the baking sheet and roast for 40 minutes until soft.
- Slice open the roasted potatoes and fluff the inside, then fill with cooked meat mixture, black beans, corn, and diced tomatoes.
- Top with shredded cheese and return to the oven for 5 to 10 minutes until melted.
- Remove from oven and add chopped green onions and yogurt or sour cream on top.
- Serve warm and enjoy.

- Roast the sweet potatoes until fully tender for best texture.
