- 2 cups fresh pineapple chunks
- ½ cup low sodium soy sauce
- ¼ cup packed brown sugar
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons olive oil
- 2 sliced green onions
- 1 teaspoon sesame seeds
- 4 cups cooked white rice
Instructions
- Heat a large skillet over medium-high heat and add the olive oil.
- In a bowl, whisk together soy sauce, brown sugar, honey, garlic, and ginger until combined.
- In a small bowl, mix cornstarch with water to create a slurry.
- Add the chicken pieces to the skillet and cook for 5 to 6 minutes until lightly golden and fully cooked.
- Stir in the pineapple chunks and cook for 2 minutes until slightly caramelized.
- Pour the teriyaki sauce mixture into the skillet and stir well.
- Bring the sauce to a gentle simmer, then stir in the cornstarch slurry.
- Cook for 3 to 4 minutes until the sauce thickens into a glossy glaze.
- Sprinkle sliced green onions and sesame seeds over the top.
- Serve warm over cooked white rice.
