Description

Tender chicken pieces simmered in a glossy homemade teriyaki sauce with sweet pineapple chunks, served over fluffy white rice for a comforting and flavor-packed dinner.

  • 1 ½ pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 cups fresh pineapple chunks
  • ½ cup low sodium soy sauce
  • ¼ cup packed brown sugar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 2 sliced green onions
  • 1 teaspoon sesame seeds
  • 4 cups cooked white rice

Instructions

  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. In a bowl, whisk together soy sauce, brown sugar, honey, garlic, and ginger until combined.
  3. In a small bowl, mix cornstarch with water to create a slurry.
  4. Add the chicken pieces to the skillet and cook for 5 to 6 minutes until lightly golden and fully cooked.
  5. Stir in the pineapple chunks and cook for 2 minutes until slightly caramelized.
  6. Pour the teriyaki sauce mixture into the skillet and stir well.
  7. Bring the sauce to a gentle simmer, then stir in the cornstarch slurry.
  8. Cook for 3 to 4 minutes until the sauce thickens into a glossy glaze.
  9. Sprinkle sliced green onions and sesame seeds over the top.
  10. Serve warm over cooked white rice.
