Description

Juicy peri peri chicken thighs roast over fluffy spiced basmati rice with onion, red bell pepper, garlic, paprika, and lemon for a bold and comforting one-pan dinner.


Ingredients

  • 8 bone-in, skin-on chicken thighs, about 2 1/2 pounds
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • 2 teaspoons sweet paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili flakes
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 1 1/2 cups long-grain basmati rice, rinsed
  • 1 medium yellow onion, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 2 tablespoons tomato paste
  • 3 cups chicken broth
  • 2 tablespoons parsley, chopped
  • 4 lemon wedges

Instructions

  1. Preheat the oven to 375°F and set out a large oven-safe baking dish or deep skillet.
  2. In a large bowl, mix 2 tablespoons olive oil, lemon juice, garlic, smoked paprika, sweet paprika, oregano, chili flakes, 1 teaspoon salt, and black pepper.
  3. Add the chicken thighs and toss until evenly coated.
  4. In the baking dish, combine the remaining 1 tablespoon olive oil, basmati rice, onion, red bell pepper, tomato paste, remaining 1/2 teaspoon salt, and chicken broth.
  5. Arrange the seasoned chicken thighs on top of the rice mixture, skin side up, and spoon any extra marinade over the chicken.
  6. Cover tightly with foil or a lid and bake for 35 minutes.
  7. Uncover and bake for 10 more minutes, or until the chicken is cooked through and the rice is tender. Broil for 2 to 3 minutes if you want extra color on the chicken.
  8. Let the dish rest for 5 minutes, sprinkle with chopped parsley, fluff the rice lightly with a fork, and serve with lemon wedges.

Notes

  • Rinse the rice well before cooking for fluffier grains.
  • For less heat, reduce the chili flakes to 1/2 teaspoon.
  • If the rice looks dry before it finishes cooking, add a small splash of hot broth and cover again.
  • Leftovers keep well in the refrigerator for up to 3 days.
