Description
Juicy peri peri chicken thighs roast over fluffy spiced basmati rice with onion, red bell pepper, garlic, paprika, and lemon for a bold and comforting one-pan dinner.

- 8 bone-in, skin-on chicken thighs, about 2 1/2 pounds
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- 2 teaspoons sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili flakes
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoon black pepper
- 1 1/2 cups long-grain basmati rice, rinsed
- 1 medium yellow onion, finely chopped
- 1 medium red bell pepper, finely chopped
- 2 tablespoons tomato paste
- 3 cups chicken broth
- 2 tablespoons parsley, chopped
- 4 lemon wedges
Instructions
- Preheat the oven to 375°F and set out a large oven-safe baking dish or deep skillet.
- In a large bowl, mix 2 tablespoons olive oil, lemon juice, garlic, smoked paprika, sweet paprika, oregano, chili flakes, 1 teaspoon salt, and black pepper.
- Add the chicken thighs and toss until evenly coated.
- In the baking dish, combine the remaining 1 tablespoon olive oil, basmati rice, onion, red bell pepper, tomato paste, remaining 1/2 teaspoon salt, and chicken broth.
- Arrange the seasoned chicken thighs on top of the rice mixture, skin side up, and spoon any extra marinade over the chicken.
- Cover tightly with foil or a lid and bake for 35 minutes.
- Uncover and bake for 10 more minutes, or until the chicken is cooked through and the rice is tender. Broil for 2 to 3 minutes if you want extra color on the chicken.
- Let the dish rest for 5 minutes, sprinkle with chopped parsley, fluff the rice lightly with a fork, and serve with lemon wedges.
Notes
- Rinse the rice well before cooking for fluffier grains.
- For less heat, reduce the chili flakes to 1/2 teaspoon.
- If the rice looks dry before it finishes cooking, add a small splash of hot broth and cover again.
- Leftovers keep well in the refrigerator for up to 3 days.
