- 2 large boneless skinless chicken fillets, sliced thinly
- 12 ounces fettuccine or linguine
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup freshly grated parmesan cheese
- 3 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/2 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
- Season the sliced chicken with salt and black pepper.
- Add olive oil to the skillet and cook the chicken for 4 to 5 minutes per side until golden and fully cooked. Remove and set aside.
- Melt the butter in the same skillet and sauté the garlic for 30 seconds until fragrant.
- Pour in the chicken broth, lemon juice, and lemon zest.
- Stir in the heavy cream and parmesan cheese, then simmer gently until smooth.
- Cook the pasta until al dente and transfer it directly into the sauce with a splash of pasta water.
- Return the chicken to the skillet and toss everything together until coated in the sauce.
- Sprinkle with fresh parsley and serve immediately with extra parmesan if desired.
Notes
- Freshly grated parmesan melts more smoothly than pre shredded cheese.
- Reserve pasta water to adjust the sauce consistency if needed.
- Fresh lemon juice gives the brightest flavor.
- Store leftovers in the refrigerator for up to 3 days.
