Description

A moist and warmly spiced cake with rich cinnamon and nutmeg flavors, balanced by a hint of citrus and a soft, tender crumb that gets even better the next day.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • 1/2 cup raisins
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 180°C and lightly grease a cake pan.
  2. In a bowl, mix flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, granulated sugar, brown sugar, melted butter, vegetable oil, milk, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just incorporated.
  5. Fold in orange zest and raisins gently.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool slightly before removing from the pan.
  9. Slice and serve warm or at room temperature.
