Description

Soft and buttery Italian Nut Roll Cookies filled with sweet chopped walnuts and rolled into delicate golden spirals. These classic cookies are rich, comforting, and perfect for holidays, coffee breaks, or sharing with family and friends.


Ingredients

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup granulated sugar
  • 1 cup warm milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 2 cups finely chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the warm milk, yeast, and 1 tablespoon of the sugar. Let sit for 5 minutes until foamy.
  3. Add the remaining sugar, melted butter, eggs, vanilla extract, and salt. Gradually mix in the flour until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth.
  5. Place the dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
  6. Roll the dough into a large rectangle about 1/4 inch thick.
  7. Spread the finely chopped walnuts evenly over the dough surface.
  8. Roll the dough tightly into a log and slice into even rounds.
  9. Arrange the cookie slices on the prepared baking sheet with space between each cookie.
  10. Bake for 18 to 22 minutes or until lightly golden around the edges.
  11. Cool slightly and dust generously with powdered sugar before serving.
