Description

Crispy baked rice cups filled with juicy honey garlic chicken coated in a glossy sweet and savory sauce, finished with green onions and sesame seeds for the perfect bite-sized comfort food.

  • 3 cups cooked jasmine rice, chilled
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 pound boneless skinless chicken thighs, diced
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon olive oil
  • 2 tablespoons green onions, sliced
  • 1 teaspoon sesame seeds

Instructions

  1. Preheat oven to 400°F and generously grease a standard muffin tin.
  2. In a large mixing bowl, combine cooked jasmine rice, eggs, and shredded mozzarella cheese until evenly mixed.
  3. Press the rice mixture firmly into each muffin cup, shaping the mixture up the sides to form cups.
  4. Bake for 20 to 25 minutes until the rice cups are golden and crispy around the edges.
  5. While the rice cups bake, heat olive oil in a large skillet over medium heat and cook diced chicken thighs until browned and fully cooked.
  6. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  7. Stir in honey, soy sauce, ketchup, cornstarch, and water. Simmer for several minutes until the sauce thickens and coats the chicken.
  8. Remove crispy rice cups from the muffin tin and fill each cup with the honey garlic chicken mixture.
  9. Top with sliced green onions and sesame seeds before serving warm.

Notes

  • Cold leftover rice works best for crispy rice cups.
  • Allow the rice cups to cool slightly before removing them from the muffin tin.
