- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons heavy cream
- 1 1/2 cups powdered sugar
Instructions
- Preheat your oven to 180°C and line a baking sheet with parchment paper.
- In a bowl, mix flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and sugar until smooth, then add egg and vanilla. Combine both mixtures to form a dough.
- Lightly flour your surface and roll out the dough evenly.
- Cut out cookie shapes and place them on the prepared baking sheet.
- Bake for 8 to 10 minutes until set but still slightly soft.
- Let cookies cool completely. Mix powdered sugar with heavy cream until smooth to create the filling.
- Spread filling on one cookie and sandwich with another. Serve and enjoy.
Notes
- Use high quality cocoa powder for deeper flavor
- Chill dough slightly if it becomes sticky
- Do not overbake to keep cookies tender
- Let cookies cool fully before adding filling
