Description

Rich chocolate sandwich cookies with a smooth, sweet cream filling, made from scratch for a fresher and more indulgent twist on a classic favorite.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons heavy cream
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 180°C and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and sugar until smooth, then add egg and vanilla. Combine both mixtures to form a dough.
  3. Lightly flour your surface and roll out the dough evenly.
  4. Cut out cookie shapes and place them on the prepared baking sheet.
  5. Bake for 8 to 10 minutes until set but still slightly soft.
  6. Let cookies cool completely. Mix powdered sugar with heavy cream until smooth to create the filling.
  7. Spread filling on one cookie and sandwich with another. Serve and enjoy.

  • Chill dough slightly if it becomes sticky
  • Do not overbake to keep cookies tender
