Description

Tender chicken, pillowy gnocchi, and spinach come together in a rich garlic parmesan cream sauce for a cozy one-skillet dinner that feels comforting and easy at the same time.


Ingredients

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 16 ounces potato gnocchi
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 2 cups baby spinach
  • 2 tablespoons chopped parsley

Instructions

  1. In a bowl, toss the chicken with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the Italian seasoning.
  2. Heat the olive oil in a large skillet over medium heat. Cook the chicken for 5 to 6 minutes, stirring occasionally, until golden and cooked through. Transfer to a plate.
  3. Add the butter to the same skillet. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream, then stir to combine. Add the uncooked gnocchi and bring to a gentle simmer.
  5. Cook for 4 to 5 minutes, stirring occasionally, until the gnocchi is tender and the sauce starts to thicken.
  6. Stir in the parmesan cheese, remaining 1/2 teaspoon salt, remaining 1/4 teaspoon black pepper, and the baby spinach.
  7. Return the cooked chicken to the skillet and cook for 2 to 3 minutes, stirring gently, until the spinach wilts and the sauce is creamy.
  8. Finish with chopped parsley and serve hot.

Notes

  • Freshly grated parmesan melts more smoothly and gives the sauce a better texture.
  • If the sauce thickens too much, add a small splash of chicken broth or cream before serving.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently.
