- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs (for coating)
- 1 cup breadcrumbs
- 1 cup vegetable oil
- 1 tablespoon fresh parsley, chopped
Instructions
- Boil the eggs, peel them, slice in half, and remove the yolks.
- In a bowl, mix yolks with mayonnaise, Dijon mustard, Cajun seasoning, paprika, salt, and black pepper until smooth.
- Fill the egg whites with the yolk mixture.
- Prepare three bowls, one with flour, one with beaten eggs, and one with breadcrumbs.
- Coat each filled egg in flour, dip in egg, and cover with breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat.
- Fry the coated eggs until golden brown and crispy on all sides.
- Remove and place on paper towels, then sprinkle with extra Cajun seasoning and garnish with parsley.
Notes
- Chill eggs before coating to help them hold shape.
- Do not overcrowd the pan while frying.
- Use panko breadcrumbs for extra crunch if desired.
