- 1 package (3 ounces) raspberry gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 2 cups full-fat plain Greek yogurt
- 1 cup fresh raspberries
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/4 cup crushed graham crackers
Instructions
- Lightly grease or line an 8×8 baking dish with parchment paper.
- In a large bowl, dissolve the raspberry gelatin completely in the boiling water.
- Stir in the cold water and let the mixture cool for about 5 minutes.
- Add the Greek yogurt, honey, and vanilla extract, then whisk until smooth and fluffy.
- Spread half of the fresh raspberries evenly in the prepared baking dish.
- Pour the yogurt gelatin mixture over the raspberries and gently fold in the remaining raspberries.
- Refrigerate for at least 4 hours or until fully set.
- Sprinkle crushed graham crackers over the top before serving.
- Slice into squares and serve chilled.
