Description

A cozy and comforting baked chicken dinner with crispy golden chicken thighs, roasted potatoes, sweet carrots, onions, and fragrant herbs. Perfect for cold evenings when you want something hearty, flavorful, and easy to prepare.


Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 1 1/2 pounds baby potatoes, halved
  • 3 large carrots, sliced into thick pieces
  • 1 large yellow onion, sliced
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon paprika
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 425°F and lightly grease a large baking dish.
  2. In a large mixing bowl, combine the potatoes, carrots, onions, olive oil, garlic, rosemary, thyme, paprika, salt, and black pepper. Toss well until evenly coated.
  3. Spread the seasoned vegetables evenly in the baking dish and pour the chicken broth around the vegetables.
  4. Arrange the chicken thighs on top of the vegetables with the skin facing upward.
  5. Bake for 40 to 45 minutes until the chicken reaches an internal temperature of 165°F and the skin becomes crispy and golden.
  6. Spoon some of the roasting juices over the chicken and vegetables before serving.
  7. Serve hot straight from the baking dish.

Notes

  • Pat the chicken dry before seasoning for crispier skin.
  • Do not overcrowd the baking dish so the vegetables roast properly.
  • Fresh rosemary and thyme provide the best flavor.
  • Broil for 2 extra minutes at the end if you want extra crispy chicken skin.
