- 6 bone-in, skin-on chicken thighs
- 1 1/2 pounds baby potatoes, halved
- 3 large carrots, sliced into thick pieces
- 1 large yellow onion, sliced
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 teaspoons chopped fresh rosemary
- 1 teaspoon fresh thyme leaves
- 1 teaspoon paprika
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 425°F and lightly grease a large baking dish.
- In a large mixing bowl, combine the potatoes, carrots, onions, olive oil, garlic, rosemary, thyme, paprika, salt, and black pepper. Toss well until evenly coated.
- Spread the seasoned vegetables evenly in the baking dish and pour the chicken broth around the vegetables.
- Arrange the chicken thighs on top of the vegetables with the skin facing upward.
- Bake for 40 to 45 minutes until the chicken reaches an internal temperature of 165°F and the skin becomes crispy and golden.
- Spoon some of the roasting juices over the chicken and vegetables before serving.
- Serve hot straight from the baking dish.
Notes
- Pat the chicken dry before seasoning for crispier skin.
- Do not overcrowd the baking dish so the vegetables roast properly.
- Fresh rosemary and thyme provide the best flavor.
