- 1 pound boneless, skinless chicken breasts
- 2 cups elbow macaroni, uncooked
- 3 cups chicken broth
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cream cheese, softened
- 1 cup milk
- 2 cups broccoli florets (fresh or thawed frozen)
Instructions
- Place the chicken breasts in the bottom of the crockpot and season with garlic powder, onion powder, salt, and pepper.
- Pour in the chicken broth and cover. Cook on low for 4 hours or until the chicken is fully cooked and tender.
- Remove the chicken, shred it with two forks, and return it to the crockpot.
- Add the uncooked elbow macaroni and stir to combine. Cover and cook on high for 30–40 minutes, or until the pasta is tender.
- Stir in the milk, cream cheese, cheddar cheese, and Parmesan until melted and creamy.
- Fold in the broccoli and let cook for another 10–15 minutes, or until broccoli is tender.
- Stir well and serve warm.
Notes
- For extra flavor, add a pinch of red pepper flakes or Dijon mustard to the cheese sauce.
- You can use rotisserie chicken as a shortcut—just skip the initial 4-hour cook time.
- Use freshly shredded cheese for the best melt and texture.
