- 2 pounds Yukon Gold potatoes, cut into bite-sized chunks
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 4 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- In a large bowl, toss the potatoes with olive oil, oregano, garlic, salt, and black pepper until evenly coated.
- Spread the potatoes evenly on the prepared baking sheet in a single layer.
- Sprinkle half of the parmesan cheese over the potatoes.
- Roast for 35 to 40 minutes, flipping halfway through cooking, until the potatoes are golden brown and crispy.
- Remove from the oven and sprinkle with the remaining parmesan cheese and fresh parsley.
- Serve immediately while hot and crispy.
Notes
- For extra crispiness, avoid overcrowding the baking sheet.
- Russet potatoes can be used instead of Yukon Gold potatoes.
- Reheat leftovers in an oven or air fryer to restore crispiness.
- Add chili flakes or smoked paprika for extra flavor.
