Description

Golden crispy roasted potatoes seasoned with oregano, garlic, olive oil, and parmesan cheese. These potatoes are crunchy on the outside, soft inside, and packed with comforting Mediterranean-inspired flavor.


Ingredients

  • 2 pounds Yukon Gold potatoes, cut into bite-sized chunks
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
  2. In a large bowl, toss the potatoes with olive oil, oregano, garlic, salt, and black pepper until evenly coated.
  3. Spread the potatoes evenly on the prepared baking sheet in a single layer.
  4. Sprinkle half of the parmesan cheese over the potatoes.
  5. Roast for 35 to 40 minutes, flipping halfway through cooking, until the potatoes are golden brown and crispy.
  6. Remove from the oven and sprinkle with the remaining parmesan cheese and fresh parsley.
  7. Serve immediately while hot and crispy.

Notes

  • For extra crispiness, avoid overcrowding the baking sheet.
  • Russet potatoes can be used instead of Yukon Gold potatoes.
  • Reheat leftovers in an oven or air fryer to restore crispiness.
  • Add chili flakes or smoked paprika for extra flavor.
