- 250 grams fettuccine pasta
- 2 cups chicken pieces
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes
- 3 garlic cloves
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Season the chicken pieces with salt and black pepper.
- Heat olive oil in a skillet over medium heat.
- Cook the chicken until golden and fully cooked, then remove and set aside.
- In the same skillet, add butter and garlic, cook until fragrant.
- Pour in the heavy cream and stir in grated parmesan cheese until smooth.
- Add sun-dried tomatoes and fresh spinach, stir until spinach wilts.
- Return the cooked chicken to the skillet and mix well.
- Cook the fettuccine pasta until al dente, then drain.
- Add the pasta to the sauce and toss until fully coated.
- Adjust seasoning if needed and let the sauce thicken slightly.
- Serve warm with extra parmesan if desired.

- Use freshly grated parmesan for best texture and flavor.
- Add a splash of pasta water if the sauce becomes too thick.
- Do not overcook the pasta to maintain the perfect texture.
- Reheat gently with a bit of cream or milk to restore consistency.
