- 3 cups cooked turkey, diced
- 4 medium Yukon Gold potatoes, peeled and cubed
- 8 ounces cremini mushrooms, sliced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 baking dish.
- Heat butter and olive oil in a large skillet over medium heat. Add onions and mushrooms and cook for 6 minutes until softened and lightly golden.
- Stir in garlic, thyme, salt, and black pepper. Cook for 1 minute.
- Add cubed potatoes and diced turkey to the prepared baking dish.
- Spread the mushroom mixture evenly over the turkey and potatoes.
- In a bowl, combine heavy cream, chicken broth, and half of the mozzarella cheese.
- Pour the creamy mixture into the baking dish and gently stir to combine.
- Cover with foil and bake for 40 minutes.
- Remove foil and top with remaining mozzarella cheese and Parmesan cheese.
- Bake uncovered for another 20 minutes until bubbly and golden brown.
- Let the casserole rest for 5 minutes before topping with chopped parsley.
- Serve warm and enjoy.
