Description

A rich and comforting casserole made with tender turkey, buttery potatoes, savory mushrooms, and a creamy herb sauce topped with melted mozzarella and Parmesan cheese. Perfect for cozy family dinners and delicious leftovers.


Ingredients

  • 3 cups cooked turkey, diced
  • 4 medium Yukon Gold potatoes, peeled and cubed
  • 8 ounces cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup chicken broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish.
  2. Heat butter and olive oil in a large skillet over medium heat. Add onions and mushrooms and cook for 6 minutes until softened and lightly golden.
  3. Stir in garlic, thyme, salt, and black pepper. Cook for 1 minute.
  4. Add cubed potatoes and diced turkey to the prepared baking dish.
  5. Spread the mushroom mixture evenly over the turkey and potatoes.
  6. In a bowl, combine heavy cream, chicken broth, and half of the mozzarella cheese.
  7. Pour the creamy mixture into the baking dish and gently stir to combine.
  8. Cover with foil and bake for 40 minutes.
  9. Remove foil and top with remaining mozzarella cheese and Parmesan cheese.
  10. Bake uncovered for another 20 minutes until bubbly and golden brown.
  11. Let the casserole rest for 5 minutes before topping with chopped parsley.
  12. Serve warm and enjoy.
