- 4 salmon fillets, about 6 ounces each
- 1 1/2 cups orzo pasta
- 2 tablespoons olive oil
- 2 tablespoons butter
- 5 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Season the salmon fillets with salt, black pepper, and paprika.
- Heat olive oil in a large skillet over medium heat.
- Sear the salmon for 4 to 5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, melt the butter and sauté the garlic for 1 minute until fragrant.
- Add the orzo and stir for 1 minute to lightly toast it.
- Pour in the chicken broth and simmer for about 10 minutes, stirring occasionally, until the orzo becomes tender.
- Reduce the heat and stir in the heavy cream and parmesan cheese until smooth and creamy.
- Add the lemon juice and chopped parsley.
- Return the salmon to the skillet and spoon the creamy sauce over the top.
- Serve warm with extra parmesan and parsley if desired.
