- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (15 ounces) tomato sauce
- 2 tablespoons tomato paste
- 1 cup beef broth
- 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped green onions
Instructions
- Heat a large Dutch oven or heavy pot over medium heat for about 2 minutes.
- Add olive oil and diced onion. Cook for 4 to 5 minutes until softened. Stir in garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper until fragrant.
- Add the ground beef and cook thoroughly, breaking it apart with a wooden spoon until browned and fully cooked.
- Stir in tomato paste, diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth until everything is fully combined.
- Bring the chili to a gentle simmer and cook uncovered for 45 minutes, stirring occasionally, until thick and rich.
- Taste and adjust seasoning if needed.
- Serve warm topped with shredded cheddar cheese and chopped green onions.
Notes
- For deeper flavor, let the chili simmer an extra 15 to 20 minutes.
- Add extra beef broth while reheating if the chili becomes too thick.
