Description

  • 2 pounds lean ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions

Instructions

  1. Heat a large Dutch oven or heavy pot over medium heat for about 2 minutes.
  2. Add olive oil and diced onion. Cook for 4 to 5 minutes until softened. Stir in garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper until fragrant.
  3. Add the ground beef and cook thoroughly, breaking it apart with a wooden spoon until browned and fully cooked.
  4. Stir in tomato paste, diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth until everything is fully combined.
  5. Bring the chili to a gentle simmer and cook uncovered for 45 minutes, stirring occasionally, until thick and rich.
  6. Taste and adjust seasoning if needed.
  7. Serve warm topped with shredded cheddar cheese and chopped green onions.

Notes

  • For deeper flavor, let the chili simmer an extra 15 to 20 minutes.
  • Add extra beef broth while reheating if the chili becomes too thick.
