Instructions
- Make sure the cooked chicken is fully chilled before mixing.
- In a medium mixing bowl, combine the chicken, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, celery, grapes, green onions, parsley, salt, and black pepper.
- Fold gently until the filling is creamy and evenly coated.
- For best flavor, chill the chicken salad filling for 20 minutes before assembling.
- Slice the croissants gently with a serrated knife, leaving the flaky layers intact.
- Place one lettuce leaf inside each croissant.
- Spoon the chicken salad filling over the lettuce and spread it evenly.
- Close the croissants gently and serve immediately.
