Description

A flaky butter croissant filled with creamy chicken salad, crisp celery, juicy grapes, fresh herbs, and lettuce for an easy café-style lunch.

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/3 cup celery, finely diced
  • 1/2 cup red grapes, halved
  • 2 tablespoons green onions, thinly sliced
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large butter croissants, sliced
  • 4 green leaf lettuce leaves

Instructions

  1. Make sure the cooked chicken is fully chilled before mixing.
  2. In a medium mixing bowl, combine the chicken, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, celery, grapes, green onions, parsley, salt, and black pepper.
  3. Fold gently until the filling is creamy and evenly coated.
  4. For best flavor, chill the chicken salad filling for 20 minutes before assembling.
  5. Slice the croissants gently with a serrated knife, leaving the flaky layers intact.
  6. Place one lettuce leaf inside each croissant.
  7. Spoon the chicken salad filling over the lettuce and spread it evenly.
  8. Close the croissants gently and serve immediately.
