Creamy potato gnocchi tossed with roasted butternut squash, tender kale, juicy chicken, parmesan cheese, and fresh sage in a rich savory sauce that feels cozy and satisfying.


Ingredients

  • 1 pound potato gnocchi
  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • 3 cups cubed butternut squash
  • 3 cups chopped kale
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Toss cubed butternut squash with 1 tablespoon olive oil, salt, and black pepper until coated evenly.
  3. Spread squash on the prepared baking sheet and roast for 25 minutes, flipping halfway through, until tender and golden.
  4. Heat the remaining olive oil in a large skillet over medium heat. Add chicken pieces and cook for 6 to 8 minutes until golden and fully cooked.
  5. Stir minced garlic and chopped sage into the skillet and cook for 1 minute until fragrant.
  6. Cook gnocchi according to package directions until they float to the top, then drain.
  7. Add heavy cream to the skillet and stir in parmesan cheese until smooth and creamy.
  8. Add chopped kale and cook gently until wilted.
  9. Fold roasted squash and cooked gnocchi into the sauce, stirring gently to coat everything evenly.
  10. Taste and adjust seasoning if needed, then serve hot with extra parmesan and fresh sage.

Notes

  • Roast the squash in a single layer for better caramelization.
  • Freshly grated parmesan melts more smoothly into the sauce.
  • Add a splash of warm water or broth if the sauce becomes too thick.
  • Leftovers can be reheated gently on the stovetop with a little cream or water.
