- 500 grams potatoes, cut into chunks
- 2 tablespoons Dijon mustard
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme
Instructions
- Preheat the oven to 200°C.
- Toss the potatoes with olive oil, salt, and pepper until evenly coated.
- Heat a large skillet over medium heat and add olive oil.
- Sear the chicken on both sides until golden, then remove. In the same pan, sauté garlic, then add chicken broth, heavy cream, and Dijon mustard. Stir well to combine.
- Return the chicken to the pan and add the potatoes, mixing gently.
- Transfer to a baking dish and cook in the oven for 30 minutes until the chicken is tender and potatoes are cooked through.
- Sprinkle fresh thyme on top, let rest briefly, then serve warm.
