  • 4 boneless skinless chicken thighs
  • 500 grams potatoes, cut into chunks
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme

Instructions

  1. Preheat the oven to 200°C.
  2. Toss the potatoes with olive oil, salt, and pepper until evenly coated.
  3. Heat a large skillet over medium heat and add olive oil.
  4. Sear the chicken on both sides until golden, then remove. In the same pan, sauté garlic, then add chicken broth, heavy cream, and Dijon mustard. Stir well to combine.
  5. Return the chicken to the pan and add the potatoes, mixing gently.
  6. Transfer to a baking dish and cook in the oven for 30 minutes until the chicken is tender and potatoes are cooked through.
  7. Sprinkle fresh thyme on top, let rest briefly, then serve warm.
