  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh raspberries
  • 1 cup powdered sugar
  • 1 to 2 tablespoons additional lemon juice

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and fluffy.
  4. Add the eggs, vanilla extract, lemon zest, and lemon juice, then mix until fully combined.
  5. Slowly add the dry ingredients into the wet ingredients and mix until a soft dough forms.
  6. Gently fold the raspberries into the dough without crushing them too much.
  7. Chill the dough for 20 minutes for thicker cookies.
  8. Scoop portions of dough onto the prepared baking sheets, spacing them evenly apart.
  9. Bake for 11 to 13 minutes until the edges are lightly golden and the centers remain soft.
  10. Allow the cookies to cool slightly on the baking sheet.
  11. Whisk the powdered sugar with the additional lemon juice until smooth to create the glaze.
  12. Drizzle the glaze lightly over the cooled cookies and serve.

  • Chilling the dough helps prevent the cookies from spreading too much.
  • Frozen raspberries can be used, but keep them frozen until mixing into the dough.
