- 2 pounds beef stew meat
- 2 medium potatoes, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 3 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat a large Dutch oven over medium-high heat.
- Mix cumin, chili powder, paprika, salt, and black pepper in a small bowl.
- Add olive oil to the pot and brown the beef stew meat in batches until golden on all sides. Remove and set aside.
- Add onion and bell peppers to the same pot and cook until softened. Stir in garlic and tomato paste.
- Return the beef to the pot. Add potatoes, beef broth, and spice mixture.
- Bring to a gentle simmer. Cover partially and cook for 1 hour and 45 minutes, stirring occasionally, until the beef is tender and the sauce thickens.
- Stir in fresh cilantro during the final few minutes of cooking.
- Serve warm with rice or tortillas.
