Description

Tender beef stew meat slowly simmered in a rich savory gravy with potatoes, bell peppers, onions, and warm spices. This comforting carne guisada is hearty, flavorful, and perfect served with rice or warm tortillas.

  • 2 pounds beef stew meat
  • 2 medium potatoes, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat a large Dutch oven over medium-high heat.
  2. Mix cumin, chili powder, paprika, salt, and black pepper in a small bowl.
  3. Add olive oil to the pot and brown the beef stew meat in batches until golden on all sides. Remove and set aside.
  4. Add onion and bell peppers to the same pot and cook until softened. Stir in garlic and tomato paste.
  5. Return the beef to the pot. Add potatoes, beef broth, and spice mixture.
  6. Bring to a gentle simmer. Cover partially and cook for 1 hour and 45 minutes, stirring occasionally, until the beef is tender and the sauce thickens.
  7. Stir in fresh cilantro during the final few minutes of cooking.
  8. Serve warm with rice or tortillas.

Notes

  • Brown the beef in batches for the best flavor.
  • Add extra broth if the stew thickens too much during cooking.
