- 1 pound 80/20 ground beef
- 1 large yellow onion, thinly sliced
- 1 tablespoon unsalted butter
- 1 teaspoon brown sugar
- 1 teaspoon fine salt, divided
- 1 teaspoon black pepper, divided
- 1 teaspoon garlic powder, divided
- 8 small gluten free tortillas, about 6 inches each
- 8 slices cheddar cheese
- 1/3 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon pickle juice
- 1/2 teaspoon paprika
- 2 cups shredded lettuce
- 16 dill pickle slices
Instructions
- In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, pickle juice, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and paprika until smooth. Set aside.
- In a mixing bowl, combine the ground beef with 1/2 teaspoon salt, 1/2 teaspoon black pepper, and the remaining 1/2 teaspoon garlic powder. Divide into 8 equal portions.
- Heat a large skillet over medium heat. Add the butter, sliced onion, and brown sugar. Cook for 12 to 15 minutes, stirring often, until the onions are soft and caramelised. Transfer to a bowl.
- Press one portion of beef thinly over one side of each tortilla, spreading it almost to the edges.
- Increase the skillet to medium-high heat. Place the tortillas beef-side down in the hot skillet. Press lightly with a spatula and cook for 2 to 3 minutes until the beef is browned and crisp.
- Flip each taco, top with 1 slice of cheddar cheese, and cook for 1 more minute until the tortilla is toasted and the cheese is melted.
- Top with caramelised onions, shredded lettuce, dill pickle slices, and a drizzle of burger sauce. Fold and serve immediately.
Notes
- Cook the onions slowly for the best sweet, rich flavor.
- Use a hot skillet so the beef develops crispy edges instead of steaming.
- Warm tortillas first if they feel stiff to help prevent cracking.
- Serve extra burger sauce on the side for dipping or drizzling.
