Description

A warm and hearty cabbage boil filled with tender cabbage wedges, smoky sausage, buttery potatoes, sweet corn, and carrots simmered in a flavorful seasoned broth. This cozy one-pot comfort meal is satisfying, simple, and packed with rich savory flavor.

Ingredients

Scale
  • 1 large head green cabbage, cut into wedges
  • 14 ounces smoked sausage, sliced into rounds
  • 1 1/2 pounds baby potatoes
  • 3 ears corn on the cob, cut into rounds
  • 3 large carrots, sliced thick
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 4 tablespoons butter
  • 2 tablespoons Old Bay seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt, or to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large Dutch oven or stockpot over medium heat.
  2. Add chicken broth, onions, garlic, potatoes, carrots, Old Bay seasoning, salt, and black pepper into the pot.
  3. Bring the broth to a gentle boil while stirring occasionally.
  4. Add sliced sausage and corn rounds, then carefully place cabbage wedges into the pot.
  5. Cover and simmer for 25 to 30 minutes until the potatoes are fork tender and the cabbage is soft.
  6. Stir in butter and fresh parsley right before serving.
  7. Ladle into bowls with plenty of broth and serve hot.

Notes

  • Add the cabbage later in the cooking process to keep it tender without becoming mushy.
  • Use smoked sausage for the richest flavor.
  • Leftovers taste even better the next day after the flavors deepen.
  • Serve with crusty bread or cornbread for a complete comforting meal.
