Description

A rich and creamy layered Biscoff cake made with soft caramel-spiced sponge, silky cookie butter frosting, and crunchy Biscoff cookie crumbs. Perfect for birthdays, celebrations, or cozy dessert nights.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 1 cup Biscoff spread for the batter
  • 1 cup Biscoff spread for the frosting
  • 3 cups powdered sugar
  • 1/3 cup heavy cream
  • 1 cup crushed Biscoff cookies

Instructions

  1. Preheat the oven to 350°F. Grease two 8-inch cake pans and line them with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. In another large bowl, beat the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the vanilla extract and 1 cup of Biscoff spread.
  6. Alternate adding the dry ingredients and milk until the batter is smooth.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake layers to cool completely.
  10. Prepare the frosting by beating 1 cup Biscoff spread, powdered sugar, and heavy cream until smooth and fluffy.
  11. Spread frosting between the cake layers and over the top and sides of the cake.
  12. Finish with crushed Biscoff cookies on top and around the sides before serving.

Notes

  • Use room temperature ingredients for a smoother batter and frosting.
  • Chill the cake before slicing for cleaner layers.
  • Add extra crushed cookies right before serving for the best crunch.
