- 1 cup boiling water
- 1 cup cold water
- 1 scoop (about 30 grams) vanilla protein powder
- 1 cup plain nonfat Greek yogurt
- 1/2 cup fresh strawberries, sliced
- 1/4 cup fresh blueberries
- 1/4 cup sugar-free whipped topping (optional)
Instructions
- Prepare 4 small dessert glasses or jars and place them on a tray.
- In a mixing bowl, whisk the sugar-free strawberry gelatin mix with the boiling water until completely dissolved.
- Stir in the cold water and allow the mixture to cool for 5 minutes.
- Whisk the vanilla protein powder into the gelatin mixture until smooth and fully combined.
- Fold in the plain nonfat Greek yogurt gently until creamy and evenly mixed.
- Pour the mixture evenly into the prepared dessert glasses.
- Refrigerate for at least 2 hours, or until fully set.
- Top with sliced strawberries, blueberries, and sugar-free whipped topping before serving if desired.
- Serve chilled.
