Description

A creamy, high-protein bariatric-friendly gelatin dessert made with sugar-free gelatin, Greek yogurt, and vanilla protein powder. This refreshing chilled treat is light, fruity, satisfying, and perfect for meal prep or healthy snacking.

Ingredients

Scale
  • 1 package (0.3 ounce) sugar-free strawberry gelatin mix
  • 1 cup boiling water
  • 1 cup cold water
  • 1 scoop (about 30 grams) vanilla protein powder
  • 1 cup plain nonfat Greek yogurt
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup fresh blueberries
  • 1/4 cup sugar-free whipped topping (optional)

Instructions

  1. Prepare 4 small dessert glasses or jars and place them on a tray.
  2. In a mixing bowl, whisk the sugar-free strawberry gelatin mix with the boiling water until completely dissolved.
  3. Stir in the cold water and allow the mixture to cool for 5 minutes.
  4. Whisk the vanilla protein powder into the gelatin mixture until smooth and fully combined.
  5. Fold in the plain nonfat Greek yogurt gently until creamy and evenly mixed.
  6. Pour the mixture evenly into the prepared dessert glasses.
  7. Refrigerate for at least 2 hours, or until fully set.
  8. Top with sliced strawberries, blueberries, and sugar-free whipped topping before serving if desired.
  9. Serve chilled.

Notes

  • Allow the gelatin mixture to cool slightly before adding yogurt to prevent separation.
  • Use clear serving glasses for a beautiful layered presentation.
  • Fresh berries should be added right before serving for best texture.
  • The dessert can be stored covered in the refrigerator for up to 4 days.
