- 1 large onion, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat oven to 400°F and lightly grease a large baking dish.
- In a large bowl, whisk together Greek yogurt, zaatar, olive oil, garlic, lemon juice, salt, and black pepper.
- Spread sliced onions and lemon slices evenly in the baking dish.
- Add chicken thighs to the marinade and coat thoroughly.

- Bake uncovered for 40 minutes or until the chicken is golden and reaches an internal temperature of 165°F.
