- 1 1/2 cups fresh pineapple rings, chopped
- 1/4 cup soy sauce
- 3 tablespoons honey
- 3 garlic cloves, minced
- 1 tablespoon olive oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 lime, sliced
- 2 tablespoons chopped parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F and lightly grease a baking dish with olive oil.
- In a saucepan over medium heat, combine soy sauce, honey, garlic, and chopped pineapple. Simmer for 5 minutes.
- Mix cornstarch with water in a small bowl, then stir into the sauce until slightly thickened.
- Place salmon fillets in the prepared baking dish and season with salt and black pepper.
- Spoon the pineapple glaze over the salmon and arrange extra pineapple pieces around the fillets.
- Bake for 14 to 16 minutes, or until the salmon flakes easily with a fork.
- Squeeze fresh lime juice over the salmon and garnish with chopped parsley before serving.
