Description

Tender baked salmon fillets coated in a sweet and savory pineapple glaze, finished with juicy roasted pineapple and fresh parsley for a bright tropical-inspired dinner.


Ingredients

  • 4 salmon fillets
  • 1 1/2 cups fresh pineapple rings, chopped
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 3 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 lime, sliced
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F and lightly grease a baking dish with olive oil.
  2. In a saucepan over medium heat, combine soy sauce, honey, garlic, and chopped pineapple. Simmer for 5 minutes.
  3. Mix cornstarch with water in a small bowl, then stir into the sauce until slightly thickened.
  4. Place salmon fillets in the prepared baking dish and season with salt and black pepper.
  5. Spoon the pineapple glaze over the salmon and arrange extra pineapple pieces around the fillets.
  6. Bake for 14 to 16 minutes, or until the salmon flakes easily with a fork.
  7. Squeeze fresh lime juice over the salmon and garnish with chopped parsley before serving.
