- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a bowl, whisk together lemon juice, olive oil, Dijon mustard, garlic, lemon zest, oregano, salt, and pepper.
- Place chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate in the refrigerator for at least 30 minutes, up to 4 hours.
- Preheat grill to medium-high heat. Remove chicken from marinade and discard the marinade.
- Grill chicken for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving for maximum juiciness.
Notes
- For best flavor, marinate the chicken for at least 2 hours.
- This marinade works well with chicken thighs or drumsticks too.
- Serve with a fresh green salad or grilled vegetables for a complete meal.
