Instructions
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Stir in the graham cracker crumbs until fully combined and the mixture thickens.
- Gently fold in the chopped fresh raspberries, distributing them evenly.
- Cover the bowl and chill the mixture in the refrigerator for 30 minutes.
- Scoop the chilled mixture and roll into small balls, then place them on a parchment-lined baking sheet.
- Melt the white chocolate chips gently until smooth.
- Dip each cheesecake ball into the melted white chocolate, coating completely.
- Place the coated balls back onto the baking sheet and refrigerate until the chocolate is set.
Notes
- Chilling the mixture before rolling makes shaping much easier.
