Instructions
- In a large pot, heat olive oil over medium heat if using.
- Add onions and sauté until soft and translucent, about 5-7 minutes.
- Add diced green bell peppers, chopped cabbage, tomatoes, and celery. Stir to combine.
- Pour in 3 cups of water, or more if desired for a thinner consistency.
- Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes, until vegetables are tender.
- Season with salt and pepper to taste. Optional: blend partially for a creamier texture or leave chunky.
- Serve hot as a light meal or side dish.
