- 15 fresh mint leaves
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons simple syrup or honey
- 2 cups sparkling water
- Ice cubes, as needed
- Lime slices and mint sprigs, for garnish
Instructions
- Add watermelon cubes to a blender and blend until smooth. Strain to remove pulp.
- In a pitcher, gently muddle mint leaves with lime juice to release flavor.
- Pour in watermelon juice and simple syrup. Stir to combine.
- Refrigerate for at least 30 minutes to let flavors blend.
- Before serving, add sparkling water and ice cubes. Stir gently.
- Pour into glasses and garnish with lime slices and mint sprigs.
